Menu Inspiration

I chose this assorted vegetable box as it had peppers and cauliflower in it, which are both items that I use regularly. My favourite recipe to make with cauliflower is Cauliflower Fettucine Alfredo! I love a good alfredo dish but the traditional sauce is, sadly, not so healthy. So in order to indulge my love of alfredo sauce I make this variation instead!

Cauliflower Fettucine Alfredo Recipe

I was given this recipe by a friend years ago and have made it many, many times! It works well with noodles alone, made into chicken alfredo, as part of a pasta bake or even in a calzone or as pizza sauce.

  • 3 cups cauliflower
  • 4 cloves garlic
  • pinch of chili flakes
  • handful of parsley
  • 1 tbsp butter or oil
  • 1/2 cup broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup parmesan cheese or nutritional yeast
  • 1/4 milk or milk substitute (I often use almond milk)
  1. Steam cauliflower with garlic until soft
  2. Blend the broth, salt, pepper, chili flakes, and parsley using a hand blender or food processor
  3. Once blended add butter/oil, parmesan/nutritional yeast, and milk
  4. Blend again and serve warm (don’t let it cool before serving as the texture changes)
